The MMM marking on the wine label refers to Roman numerals and serves as a reminder of the three-thousand-year period during which wine has been cultivated in the Loire Valley, as well as its connection to the world’s most renowned grape varieties.
During the summer, the vine shoots are trimmed and some grapes are removed to ensure a more intense wine. Only the best grapes are harvested. The grapes undergo cold maceration for a couple of weeks before fermentation, and during fermentation, the cap is pushed down daily to ensure sufficient extraction. Malolactic fermentation takes place in the spring following the harvest.
