The wine comes from the Jurançon Sec region in France, located in the Pyrenean mountain area. The grapes are sourced from a 3-hectare area across two high-altitude vineyard sites. Grapes from Monein ripen earlier in a warmer climate, resulting in a fuller-bodied wine. Grapes from Chapelle de Rousse grow in a cooler location, ripening later and producing a wine with lively acidity. To the north of the appellation runs an old road once used to transport Béarn salt to Pau. This salt road is called ‘Cami-Salíe’, which is also reflected in the name of this wine. The climate during the growing season is maritime, cool, and humid, but autumn is often hot and dry due to southern winds (the Foehn effect). The wine is gently and slowly pressed to preserve the fruitiness and aromas. Most of the wine ferments in temperature-controlled tanks, with a small portion in oak barrels. No malolactic fermentation is carried out. The wine is then aged for 10 months, with the lees left in contact to enhance flavor. It ages beautifully in bottle for 5–8 years.
