Grillo is becoming more and more popular quality, richly flavoured grape variety from Sicily. It is a relatively young variety and DNA research has brought the, that it is a natural cross between Catarratto Bianco and Muscat of Alexandria. Sicilian sunshine gives Grillo a rich fruitiness and the temperature variation adds fine acidity. In addition, Grillo thrives in the sandy soils of the region. Grillo grape juice ferments well in a chilled steel tank at 18 °C for ten days and continues to mature on the lees for five months.
