The wine comes from the Veneto region in Northeastern Italy. Amarone wines are made from dried grapes. In the so-called appassimento method, harvested grape bunches are left to dry in a cool environment for a few months before winemaking begins. During the drying process, the grapes lose about one-third to half of their weight, increasing their sugar concentration, lowering acidity, and intensifying flavor and aroma. This method produces very full-bodied wines with high alcohol content and a touch of residual sugar. Amarone wines are made entirely from dried grapes.
