Myllyn Paras Durum Wheat Flour is made from durum wheat, whose grains are glassy translucent and harder than those of regular wheat. Durum wheat has a low content of elastic binder, making it well suited for making fresh pasta and as a raw material for fluffy, non-elastic pizza bases. Durum wheat flour is also suitable for other baking where elastic binder is not desired.
